PORTALES, NM – July 22, 2021 – Eastern has teamed up with Taco Box to create Silver Dawg Salsa, further solidifying a partnership with an iconic local restaurant that has been steadfast since owner Tom Martin opened his Portales location directly across from the ENMU campus in 1987.
Sales of Silver Dawg Salsa continue Eastern's effort to partner with and support New Mexico businesses while raising money for scholarships. A portion of the proceeds from each jar sold benefit ENMU student scholarships. Other fundraising and efforts include the ENMU-branded coffee, Greyhound Grind, and upcoming wines produced in conjunction with Enchantment Vineyards of Portales, New Mexico, and Lescombes Family Vineyards of Deming, New Mexico.
"We are excited to partner with ENMU on the Silver Dawg Salsa," Martin said. "It gives both of us a way to showcase and extend the partnership that we have had for more than 50 years. We think it is the perfect blend of heat and flavor. The Dawg with just a bit of a bite. Enjoy!"
Professor of Communication Darrell Roe came up with the Silver Dawg name, and ENMU President Patrice Caldwell said the salsa is the perfect pairing between Taco Box and Eastern.
"Eastern's partnership with Tom Martin and Taco Box is a long and valued tradition. Students, staff and alumni have always loved the food and friendliness there," Caldwell said. "I love that this fundraiser opportunity means scholarships for students and a first-class salsa to spice up any meal. Thank you, Taco Box!"
