Job Summary: A'viands, a progressive Minnesota-based food and services management company, is seeking a hands-on and innovative Catering Director to oversee the catering operations at New Mexico Highlands University located in Las Vegas, New Mexico.
Qualifications: Bachelor's degree in culinary arts or related field.
A minimum of 2 years experience as a catering manager.
Possess professionalism and passion for customer and client relations.
Demonstrated ability to relate well to individuals and groups with widely varying backgrounds, perspectives, education and skills is required.
Excellent work record, superior communication, cooperation, and organizational skills required.
Demonstrated institutional, hotel, or restaurant culinary skills to include large quantity production.
Duties: Plan, organize and supervise all catering services.
Primary contact in planning catered events, including developing menus, transportation service, room decoration, procuring of rentals, and staffing.
Plan and develop menus based on such factors as market trends, customer preferences and nutritional considerations.
Direct and coordinate the work culinary staff.
Maintain proper production, safety and sanitation standards.
Direct and participate in the preparation of standard and gourmet food items.
Evaluate the quality of raw food and ensure the quality of finished products.
Plan, develop and implement culinary production for special events and catered functions.
Supervise and participate in the preparation and display of menu items for special functions.
Maintain proper inventory controls for food, supplies, and equipment of catered events.
Interview, select, train and evaluate culinary support staff.
Control revenue and expenses to ensure financial goals in conjunction with the Food Service Director.
